The grape cheese mod. It is a wonderful mod made the the Indonesian prince Bill himself that adds everything grape cheese related including all the health benefits and detriments.

 

I myself like the Applied Energistics mod, if for no other reason than the auto-crafting function. It also can store and automate an enormous amount of stuff, which is always handy, from smelting stacks of ores to cobble gen automation. Not to mention the convenient all-in-one sorting and searching system (which is byfar easier than running around a warehouse of chests looking for one stupid item...)
As for server moderators, my top 5 are (in no particular order) Misfit, DWG, Homie, Mira, and Gthang
